Ingredients
4 medium sweet potatoes
1 tablespoon olive oil
2 cups baby spinach, chopped
1 cup mushrooms, sliced
1 avocado, diced
3/4 cup crumbled feta cheese
1 small red onion, finely chopped
2 garlic cloves, minced
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
2 tablespoons fresh parsley, chopped
Juice of 1/2 lemon
2 tablespoons toasted pumpkin seeds or chopped walnuts (optional)
Hot honey, for drizzling (optional)
Instructions
Preheat the oven to 425°F (220°C).
Wash, dry, and pierce each sweet potato several times with a fork.
Place on a baking tray and roast for 45 to 55 minutes, or until fork tender.
Meanwhile, heat the olive oil in a large skillet over medium heat.
Cook the chopped red onion for about 3 minutes until softened.
Add the garlic and mushrooms and cook for 5 to 6 minutes until golden.
Stir in the spinach, Italian seasoning, smoked paprika, salt, and black pepper, then cook until the spinach wilts.
Slice each roasted sweet potato lengthwise and gently fluff the flesh with a fork.
Divide the spinach and mushroom mixture evenly among the sweet potatoes.
Top with diced avocado and crumbled feta cheese.
Sprinkle with fresh parsley and squeeze lemon juice over each potato.
Finish with toasted pumpkin seeds or walnuts and drizzle with hot honey if desired.
Serve immediately while warm.
Notes
Choose sweet potatoes of similar size for even cooking.
Roast directly on the oven rack for crispier skins if preferred.
Allow the mushrooms to brown before stirring for maximum flavor.
Add the avocado and fresh garnishes just before serving.
Store leftovers in the refrigerator for up to 3 days and reheat before adding the avocado and toppings.
