An irresistible appetizer combining creamy whipped burrata, juicy roasted cherry tomatoes, golden crispy garlic, and sweet-spicy hot honey. Fresh basil, parsley, and lemon add a bright finish, while toasted crusty bread makes it perfect for scooping up every delicious bite.

Ingredients

For the Roasted Cherry Tomatoes

2 cups (300 g) cherry tomatoes

1 1/2 tbsp olive oil

2 garlic cloves, lightly crushed

1/2 tsp dried oregano

1/2 tsp dried thyme

1/4 tsp salt

1/4 tsp black pepper

For the Whipped Burrata

8 oz (225 g) burrata cheese

1/4 cup (60 g) whole-milk Greek yogurt

1 tbsp extra-virgin olive oil

1 tbsp fresh lemon juice

1/4 tsp salt

1/4 tsp black pepper

For the Crispy Garlic

3 garlic cloves, very thinly sliced

2 tbsp olive oil

Pinch of salt

For the Hot Honey

3 tbsp honey

1/4 tsp red pepper flakes

1 tsp fresh lemon juice

For Garnishing

1 tbsp fresh basil, torn

1 tbsp fresh parsley, chopped

1 tsp lemon zest

1 tbsp grated Parmesan, optional

Instructions

1. Preheat the oven to 425°F (220°C). Place the cherry tomatoes on a baking sheet and toss them with olive oil, lightly crushed garlic, dried oregano, dried thyme, salt, and black pepper.

2. Roast the tomatoes for 18–22 minutes, until softened, blistered, and beginning to caramelize around the edges.

3. While the tomatoes roast, drain the burrata and add it to a food processor with Greek yogurt, extra-virgin olive oil, lemon juice, salt, and black pepper.

4. Blend the burrata mixture for 30–60 seconds, until smooth, creamy, and light.

5. Heat 2 tbsp olive oil in a small skillet over medium-low heat. Add the thinly sliced garlic and cook for 2–4 minutes, stirring frequently, until golden and crisp.

6. Remove the garlic from the oil as soon as it turns golden and transfer it to a paper towel-lined plate. Sprinkle lightly with salt.

7. Add the honey, red pepper flakes, and fresh lemon juice to a small saucepan. Warm over low heat for 1–2 minutes, just until loosened and fragrant. Do not let it boil.

8. Spread the whipped burrata generously across a large serving platter or shallow bowl. Use the back of a spoon to create gentle swirls across the surface.

9. Spoon the warm roasted cherry tomatoes over the whipped burrata and drizzle some of the flavorful roasting oil over the top.

10. Scatter the crispy garlic evenly over the tomatoes and burrata.

11. Drizzle the warm hot honey generously over the top, adjusting the amount of chili to taste.

12. Finish with torn fresh basil, chopped parsley, and lemon zest. Add a light sprinkle of grated Parmesan if desired.

13. Serve immediately with toasted crusty bread, crostini, toasted sourdough, ciabatta, or rustic country bread.

Notes

Use ripe, flavorful cherry tomatoes because roasting brings out their natural sweetness. Watch the garlic carefully while frying because thin slices can burn quickly. Remove them from the oil as soon as they become golden. Warm the hot honey gently and do not boil it. Serve the roasted tomatoes warm for a beautiful contrast with the creamy whipped burrata. For the best texture, add the crispy garlic and hot honey just before serving. You can prepare the roasted tomatoes, whipped burrata, and hot honey ahead of time and store them separately. Prepare the crispy garlic shortly before serving so it remains crunchy. Regular burrata can be served whole or torn into pieces, but whipping it with Greek yogurt creates a lighter, spreadable texture. Fresh mozzarella or ricotta can be used instead of burrata. Ricotta gives a texture closer to whipped burrata. Use regular honey instead of hot honey for a milder version, or adjust the red pepper flakes to control the heat. Fresh thyme, oregano, or a small amount of fresh mint can be added along with the basil and parsley. Toasted sourdough, crusty baguette, ciabatta, and rustic country bread are excellent serving options. Serve as part of an antipasto platter with olives, roasted vegetables, cured meats, and crusty bread. For a more substantial meal, pair with a simple green salad, grilled vegetables, roasted potatoes, or pasta.
