Description
White Bean & Arugula Salad with Lemon Dressing is a zesty, creamy and refreshing salad that comes together with minimal effort. Buttery white beans are combined with peppery arugula, juicy cherry tomatoes, crisp red onion and salty feta, then finished with a silky lemon vinaigrette.
Ingredients
3 tablespoons good olive oil
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon honey
Salt and black pepper, to taste
4 cups fresh arugula
1 can (15 oz) white beans, rinsed and drained
1/2 small red onion, thinly sliced
1/2 cup cherry tomatoes, halved
1/4 cup crumbled feta cheese
2 tablespoons fresh parsley, chopped
Instructions
Add the olive oil, fresh lemon juice, Dijon mustard and honey to a small bowl or jar. Season with salt and black pepper. Whisk thoroughly, or seal the jar and shake, until the dressing becomes smooth and emulsified.
Add the fresh arugula to a large bowl. Add the rinsed and drained white beans, thinly sliced red onion, halved cherry tomatoes, crumbled feta and chopped fresh parsley. Gently combine the ingredients, taking care not to break up the beans.
Drizzle the lemon dressing over the salad and toss gently until the ingredients are lightly coated.
Serve immediately while the arugula is fresh and crisp.
Notes
Use good-quality olive oil because the dressing is simple and its flavour comes through.
Start with a light amount of dressing and add more if needed.
Slice the onion thinly so its flavour distributes evenly throughout the salad.
Allowing the assembled salad to sit for 5–10 minutes can help the flavours come together.
If preparing the salad for later, keep the dressing separate until you’re ready to serve.
