Winter-Warmer Layered Sweet Potato & Pumpkin Lasagna combines tender roasted sweet potatoes and pumpkin with creamy ricotta, Greek yoghurt, Parmesan and fragrant herbs, all finished with melted mozzarella and a golden bubbling top. It’s a cosy vegetarian-style bake that’s perfect for family dinners, weekend meals and relaxed gatherings.
Ingredients
For the Vegetables:
2 large sweet potatoes, thinly sliced
2 cups pumpkin, thinly sliced or roasted
2 tbsp olive oil
Salt and black pepper, to taste
1 tsp garlic powder
½ tsp nutmeg, optional
For the Creamy Ricotta Layer:
1½ cups ricotta cheese
½ cup Greek yoghurt
ÂĽ cup grated Parmesan cheese
1 garlic clove, minced
1 tbsp olive oil
½ tsp dried thyme
Salt and black pepper, to taste
For the Lasagna Base:
1½ cups marinara sauce or light béchamel sauce
½ cup shredded mozzarella cheese
2 tbsp grated Parmesan cheese
For Garnish:
Fresh sage or parsley
Pinch of chilli flakes, optional
Instructions
Preheat the oven to 400°F (200°C).
Place the thinly sliced sweet potatoes and pumpkin in a large bowl. Add the olive oil, garlic powder, salt, black pepper and nutmeg if using. Toss gently until evenly coated.
Arrange the vegetables on a baking tray and roast for 20–25 minutes, until slightly tender but still firm enough to hold their shape during layering.
While the vegetables roast, prepare the ricotta mixture. Combine the ricotta cheese, Greek yoghurt, grated Parmesan, minced garlic, olive oil and dried thyme in a bowl. Season with salt and black pepper and stir until smooth and creamy.
Reduce the oven temperature to 375°F (190°C).
Spread a thin layer of marinara sauce or light béchamel sauce across the bottom of a baking dish.
Add a layer of roasted sweet potato and pumpkin, followed by a layer of the creamy ricotta mixture.
Continue layering the vegetables, sauce and ricotta mixture until all the ingredients have been used.
Finish with the remaining sauce, then sprinkle the mozzarella and grated Parmesan evenly over the top.
Cover the baking dish loosely with foil, keeping the foil from touching the cheese if possible.
Bake the covered lasagna for 30 minutes.
Remove the foil and continue baking for another 15–20 minutes, until the cheese is melted, bubbling and golden brown.
Remove the lasagna from the oven and allow it to rest for 10 minutes before slicing.
Garnish with fresh sage or parsley and a pinch of chilli flakes if desired. Serve warm.
Notes
Slice the sweet potatoes and pumpkin evenly so they cook consistently.
Don’t over-roast the vegetables before layering; they should remain slightly firm.
Allow the finished lasagna to rest for 10 minutes before slicing so the layers settle.
Watch the final uncovered baking stage carefully so the cheese becomes golden without over-browning.
Use marinara for a richer tomato flavour or light béchamel for a creamier result.
Store leftovers in the refrigerator and reheat thoroughly before serving.
