Zesty Mediterranean Cauliflower with Creamy Sweet Glaze is a vibrant roasted vegetable dish featuring caramelized cauliflower, creamy Greek yogurt and tahini glaze, salty feta, juicy pomegranate, toasted almonds, and fresh herbs.
Ingredients
1 large head cauliflower (about 900 g), cut into bite-sized florets
2 tbsp olive oil
1 tsp smoked paprika
1 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1/3 cup (80 g) Greek yogurt
2 tbsp honey
1 tbsp fresh lemon juice
1 tbsp tahini
1 tsp Dijon mustard
1 small garlic clove, finely minced
1/4 tsp salt
1–2 tbsp water, as needed
1/3 cup (50 g) crumbled feta cheese
1/4 cup (40 g) pomegranate seeds
2 tbsp chopped fresh parsley
1 tbsp fresh dill, chopped
2 tbsp toasted almonds, roughly chopped
1/4 tsp red pepper flakes, optional
Instructions
1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
2. Place the cauliflower florets in a large bowl. Add the olive oil, smoked paprika, dried oregano, garlic powder, cumin, salt, and black pepper. Toss thoroughly until every piece is evenly coated.
3. Spread the seasoned cauliflower across the prepared baking sheet in a single layer. Leave some space between the florets so they roast rather than steam.
4. Roast for 25–35 minutes, turning the cauliflower halfway through, until tender in the center and deeply golden and caramelized around the edges.
5. While the cauliflower roasts, whisk together the Greek yogurt, honey, lemon juice, tahini, Dijon mustard, minced garlic, and salt in a small bowl.
6. Gradually add 1–2 tablespoons of water until the glaze becomes smooth and thin enough to drizzle. Adjust the consistency as needed.
7. Place the chopped almonds in a dry skillet over medium-low heat. Toast for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Remove from the heat and let them cool slightly.
8. Transfer the hot roasted cauliflower to a large serving platter. Drizzle the creamy sweet glaze generously over the cauliflower, making sure some reaches the crispy roasted edges.
9. Scatter the crumbled feta evenly over the cauliflower, leaving some larger pieces visible for a creamy and salty contrast.
10. Sprinkle the pomegranate seeds, fresh parsley, dill, and toasted almonds over the top.
11. Finish with a light sprinkle of red pepper flakes if desired. Serve immediately while the cauliflower is warm and caramelized and the toppings are fresh.
Notes
Don’t overcrowd the baking sheet. Spread the cauliflower out so hot air can circulate around each floret and create crispy, caramelized edges.
Cut the cauliflower into relatively similar-sized florets so they roast evenly.
Roast at 425°F (220°C) for better browning and deeper flavour.
Toast the almonds for a few minutes in a dry skillet to make them more aromatic and crunchy.
Adjust the creamy glaze with a little water if the yogurt mixture is too thick for drizzling.
Add the pomegranate, herbs, feta, and almonds just before serving to preserve their texture and colour.
Serve immediately for the best contrast between the warm roasted cauliflower and cool creamy glaze.
Fresh cauliflower generally provides the best roasted texture, but frozen cauliflower can also be used. Roast it directly from frozen and avoid overcrowding the pan.
The tahini can be omitted or replaced with a small amount of almond butter for a slightly different nutty flavour.
Goat cheese can be substituted for feta if you prefer a softer and tangier flavour. Crumbled queso fresco can also be used for a milder option.
For a vegan version, use plant-based Greek-style yogurt, replace the honey with maple syrup, and omit the feta or use a dairy-free feta alternative.
For extra heat, add more red pepper flakes or a small pinch of cayenne pepper to the roasting spices.
Serve alongside grilled chicken, roasted fish, lamb, or other Mediterranean-inspired proteins.
For a vegetarian meal, serve with warm pita bread, hummus, lentils, couscous, quinoa, or a cucumber and tomato salad.
