Description

Crispy Baked Sweet Potato Stacks with Brie & Maple Honey Drizzle are the perfect combination of tender roasted sweet potatoes, creamy melted Brie and a buttery maple honey finish. Each little stack develops beautifully crisp golden edges while the layers of Brie become soft and gooey, creating an irresistible sweet-and-savoury bite.


Ingredients

For the Sweet Potato Stacks:

2 large sweet potatoes, peeled and thinly sliced

6 oz (170 g) Brie cheese, rind removed and thinly sliced

2 tbsp olive oil

1 tsp fresh thyme leaves

½ tsp garlic powder

½ tsp smoked paprika

½ tsp salt

¼ tsp black pepper

For the Maple Honey Drizzle:

2 tbsp maple syrup

1 tbsp honey

1 tbsp melted butter

1 tsp fresh lemon juice

Pinch of sea salt

For Garnish:

Fresh thyme leaves

2 tbsp toasted pecans, chopped (optional)

Flaky sea salt, optional


Instructions

Preheat the oven to 400°F (200°C).

Peel the sweet potatoes and slice them into thin, even rounds. Place the slices in a large bowl and toss with olive oil, fresh thyme, garlic powder, smoked paprika, salt and black pepper until evenly coated.

Line a baking sheet with parchment paper. Arrange several sweet potato slices into small individual stacks, alternating the sweet potato slices with pieces of Brie. Keep the stacks compact so they hold together during baking.

Loosely cover the baking sheet with foil and bake for 25 minutes.

Carefully remove the foil and continue baking for another 15–20 minutes, until the sweet potatoes are tender and the edges are crisp and golden.

While the sweet potato stacks are baking, whisk together the maple syrup, honey, melted butter, fresh lemon juice and sea salt until smooth and well combined.

Remove the stacks from the oven and allow them to cool for 3–5 minutes.

Drizzle the maple honey mixture generously over each stack while the Brie is still warm and creamy.

Finish with fresh thyme leaves, toasted chopped pecans if using, and a light sprinkle of flaky sea salt. Serve warm.

Notes

Slice the sweet potatoes thinly and evenly so they cook at the same rate.

Keep each stack compact so the layers stay together during baking.

Covering the stacks during the first part of baking helps the sweet potatoes become tender.

Remove the foil for the final 15–20 minutes to create crisp, golden edges.

Serve warm while the Brie is soft and melted.

Toasted pecans add an optional crunchy contrast.

For the best texture, bake shortly before serving and add the maple honey drizzle after baking.

Store leftovers in an airtight container in the refrigerator and reheat gently in the oven.
