Greek Beef Wraps with Feta, Cucumber, Cherry Tomatoes & Greens

Description

Greek Beef Wraps with Feta, Cucumber, Cherry Tomatoes & Greens are fresh, flavourful wraps filled with seasoned ground beef, crisp cucumber, juicy cherry tomatoes, crunchy greens, and creamy feta. A simple lemon yogurt sauce with garlic and fresh herbs brings everything together for a satisfying meal that’s easy to prepare on a busy day.


Ingredients

1 lb (450 g) lean ground beef

1 tbsp olive oil

1 small onion, finely diced

2 garlic cloves, minced

1 tsp dried oregano

1/2 tsp smoked paprika

1/2 tsp ground cumin

1/2 tsp salt

1/4 tsp black pepper

1 tbsp fresh lemon juice

4 large pita breads or flatbreads

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

2 cups mixed greens or shredded lettuce

1/2 cup crumbled feta cheese

2 tbsp fresh parsley, chopped

1/2 cup Greek yogurt

1 tbsp fresh lemon juice

1 garlic clove, minced

1 tbsp fresh dill or parsley, chopped

1/4 tsp salt

1/4 tsp black pepper


Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2–3 minutes, until softened.

2. Add the minced garlic and ground beef, breaking the beef apart as it cooks. Continue cooking for 6–8 minutes, until the beef is browned and cooked through.

3. Add the dried oregano, smoked paprika, ground cumin, salt, and black pepper. Stir well and cook for another 1–2 minutes, allowing the spices to coat the beef. Finish with the fresh lemon juice, stir, and remove from the heat.

4. In a small bowl, combine the Greek yogurt, lemon juice, minced garlic, fresh dill or parsley, salt, and black pepper. Stir until smooth and creamy. Set aside until you’re ready to assemble the wraps.

5. Slice the cucumber and halve the cherry tomatoes. Have the mixed greens or shredded lettuce, crumbled feta, and fresh parsley ready for assembling.

6. Warm the pita breads or flatbreads in a dry skillet for approximately 20–30 seconds per side, just until they become soft and flexible.

7. Spread a generous spoonful of the lemon yogurt sauce over each warm wrap. Add the mixed greens, seasoned beef, cucumber, cherry tomatoes, and crumbled feta.

8. Sprinkle the wraps with fresh parsley. Add a little extra oregano or freshly cracked black pepper if desired.

9. Fold the sides inward and roll each wrap tightly. Serve immediately with extra lemon yogurt sauce and lemon wedges.

Notes

Don’t overcook the beef. Cook until browned and cooked through, then remove it from the heat to keep it flavourful.

Briefly warming the pita makes the wraps softer and easier to fold without tearing.

Slice the cucumber and tomatoes shortly before assembling for the best texture.

Add the lemon yogurt sauce generously for a creamy, fresh contrast to the seasoned beef and feta.

Tuck the sides in first, then roll tightly so the filling stays inside.
