How to Cook the Perfect Steak: A Chef’s Guide to Juicy Results
Ingredients
- Beef sirloin steaks – 2 slices, about 2 fingers thick (approximately 3–4cm / 1.2–1.5 inches)
- Fresh rosemary sprigs
- Extra virgin olive oil, as needed
- Salt, as needed
- Black pepper, as needed
Method
- Place the beef sirloin steaks on a cutting board. Pat them dry thoroughly with kitchen paper, then massage the meat with a thin layer of extra virgin olive oil. Add a few fresh rosemary needles, pressing them gently onto the surface to release their aromatic oils.
- Heat a cast-iron pan or heavy-bottomed grill pan until it becomes very hot. The surface must be scorching: when the meat touches it, it should sizzle immediately and loudly.
- Lay the steak on the hot pan or grill and cook for approximately 3 minutes per side for medium-rare, without piercing or moving it. This allows a proper crust to form while keeping the inside tender and juicy.
- Remove the steak from the heat and transfer it to a cutting board. Slice it diagonally, against the grain, into diamond-shaped pieces, then fan the slices out slightly on the board.
- Place the sliced steak back on the hot grill or pan for just a few seconds—only long enough to seal the cut surfaces and enhance the flavour. Remove immediately and season with salt and pepper to taste.
- Serve hot, with the sliced steak fanned out on plates, and enjoy the perfect steakhouse experience at home.
Storage and Reheating
Cooked steak is best enjoyed immediately, straight from the pan. If you have leftovers, store them in an airtight container in the refrigerator for up to 1 day. To reheat, warm gently in a pan over low heat to avoid drying out the meat. Alternatively, enjoy cold, thinly sliced in salads or sandwiches for a delicious next-day treat.
